The milk and cheese mellow out the spiciness of the buldak, so even if you're not a fan of spicy food, it's worth a try. Let's get started with the rosé buldak tteokbokki recipe.
Tips for success
- 🔥 Beware of dysregulationSince it contains milk, it separates easily if left on high heat for too long, so be sure to simmer it slowly over medium heat for a thick but smooth sauce.
- 🧀 When to add cheese: If you add the cheese too early, it will stick to the bottom and burn. Add it when the noodles are almost cooked and the sauce has the consistency you want so it blends in smoothly.
- 🥓 Bacon greaseThe bacon itself produces a lot of grease, and if you don't use it all up, the flavor will be overpowering. If there's too much grease in the pan, just wipe it off with a kitchen towel.
- 🍜 When to boil noodles: Buldak fried noodles cook faster than regular tteokbokki tteok, so don't boil them for too long to avoid spreading the noodles.

Substitutable materials
- Cheddar cheese → mozzarella cheese (soft and stretchy), sliced cheese (melts quickly)
- Bacon → Ham (mild), Spam (salty and flavorful)
- Milk → soy milk (savory and light), milk + half-and-half (thicker and creamier)
- Vienna sausage → kielbasa (stronger flavor), regular sausage (more popular)
- Wheat rice cake → rice cake (chewier, but pre-soaked)
The creation process

1) Dice the onion, cut the bacon into bite-sized pieces, and cut the sausage into bite-sized pieces.
💡The onions sweeten as they sauté and cut through the spiciness of the sauce.

2) Heat 1 T of oil in a pan over medium heat and add the onion, bacon, and sausage.
💡 This is where the oil from the bacon comes out and coats the other ingredients, deepening the flavor.

3) When the onions are transparent and the bacon has a golden color, pour in 450 ml of milk.
💡Keep the heat on medium! Milk will separate and lose flavor if it boils over high heat for too long.

4) Add the buldak fried noodles, sauce, wheat cakes, 1T gochujang, 3T ketchup, and cheddar cheese.
💡At this point, you'll need to stir the ingredients well to evenly combine the flavors.

5) When the noodles start to loosen, I'll bring the milk to a boil, stirring until it starts to thicken.
💡If you boil it too long, the rice cakes will spread, so it's best to turn off the heat at the point where the consistency thickens.

6) Finally, sprinkle on the fried chicken and you're done.
💡The spicy aroma and seaweed flavor will definitely wake up your taste buds.
Storage & Utilization
The finished rosé buldak tteokbokki is best eaten right away, but if you have leftovers, it will keep well in an airtight container in the refrigerator for up to a day.
However, the tteokbokki can harden, so when reheating, I recommend adding 2-3 tablespoons of milk and stirring over medium heat.
The leftover sauce is so versatile.

FAQs
Q. Can I use whipped cream instead of milk?
A. Yes, the whipped cream gives it a much richer and decadent flavor, but you may want to reduce the amount a bit and mix in some milk.
Q. Can I use rice cakes instead of wheat cakes?
A. Absolutely, rice cakes are chewier and have a lighter flavor, but they cook much better if you soak them for 10 minutes beforehand.
Q. If I add all the bulgogi sauce, won't it be too spicy?
A. Yes, it can be spicy, and if it's too spicy for you, you can adjust by adding half the sauce or increasing the amount of milk and cheese.
Q. Can I make this without cheese?
A. Yes, you can. Without the cheese, the flavor is less savory, but you can enjoy it like a clean broth tteokbokki.
Q. How can I make sure my kids can eat it?
A. Use half the buldak sauce, no gochujang, and add at least two slices of cheese to make the spiciness much milder.
Q. Can I add a ramen sari?
