Recipe information
Prep ingredients (makes 2 sandwiches)
- 4 slices of bread
- 6 eggs
- 2 T mayonnaise
- 1 t sugar
- 3 pinches salt
- a pinch of black pepper

How to create


- Straight from the fridge 6 eggsinto a pot, fill it with water to submerge the 80%, close the lid, and bring to a boil over low heat for 5 minutes.
💡 Add 1 T vinegar and 1 T salt together to make it easier to lay the rinds. - Then turn the heat to medium and simmer for another 8 minutes.


- Cool the hard-boiled eggs by placing them in cold water for about 10 minutes, then peel them.








- Separate the whites from the yolks with a paring knife and crumble them into a fine mesh strainer.
💡 Straining them through a mesh strainer will give you the smoothest texture, but it can make your arms hurt. Instead, you can whip the yolks in a blender and chop the whites finely to get an almost fluffy texture.





- Here 2 T mayonnaise, 1 t sugar, 3 pinches salt, and a pinch of pepperand mix evenly.
💡 Dip a measuring spoon into the softened egg to get a rough measurement, this will prevent the mayonnaise from sticking to the spoon.


- Spread a thin layer of mayonnaise on one side of the bread, then spread half of the prepared egg mayo.


- Spread a thin layer of mayonnaise on the bread you'll be covering as well.
💡 Trim the edges and you'll have a nice, clean, convenience store sandwich.
Caveats & tips
- Egg white: Protein chunks can get tough and mushy if you run them in a blender for too long, so make sure to chop or strain them in short bursts.
- Prepare the filling: Make the sandwich fillings ahead of time and refrigerate them for quick assembly in the morning.
- Adjust sweetness: This recipe is subtly sweet, so if you like it sweeter, try adding a little more sugar.
