Okonomiyaki Recipe

Today, we're sharing a recipe for Okonomiyaki, a Japanese-style pancake dish.
Okonomiyaki The recipe is a typical Osaka dish that translates to "whatever you like".
Shredded cabbage, shrimp, and plenty of bacon give it a tender, hearty texture, and with our house-made teriyaki sauce and mayo, it tastes just as good at home as it does at the restaurant.
Once you've made the dough, you're free to add whatever ingredients you like, making it perfect for a family meal or a quick party menu.

Preparation materials

  • 1/4 head cabbage (shredded)
  • 1/2 green onion
  • 200 ml panko crumbs
  • About 150 ml of water
  • Honda 1/2t
  • 1 egg
  • 3 to 5 strips of bacon
  • 5 to 10 shrimp
  • 2 T cooking oil
  • mayonnaise, to taste
  • Teriyaki sauce (make your own or use store-bought)

💡Other than the dough ingredients, you can add whatever you like.

Teriyaki sauce ingredients

  • 6 T tonkatsu sauce
  • 1.5 T Worcestershire sauce
  • 2 T ketchup
  • 2 T oligosaccharides
  • 1 T soy sauce
  • 1 T water

* I measured with a measuring spoon (1T=15cc, 1t=5cc).

How to create

  • We'll start by making the teriyaki sauce and letting it cool.
    💡If you're using a commercial sauce, skip this step.
  • In a small saucepan, combine 6 T tonkatsu sauce, 1.5 T Worcestershire sauce, 2 T ketchup, 2 T oligosaccharide, 1 T soy sauce, and 1 T water over medium heat, stirring well to bring to a boil to make a sauce, then set aside to cool.

  • Defrost frozen shrimp by placing them in cold water.
  • Thinly slice 1/2 a leek, 1/4 head of cabbage, and chop the bacon and shrimp into bite-sized pieces.
  • In a bowl, combine 200 ml panko flour, about 150 ml water, and 1/2 t hondashi and mix well to form a dough.
    💡 Start with 100 ml of water, and adjust further to get the consistency of condensed milk.
  • Add the shredded cabbage, scallions, bacon, and shrimp to the batter and toss to coat.
  • Heat 2 T of cooking oil in a skillet over medium heat for 1 minute, then add a thick layer of batter.

  • When the sides start to change color, use a plate to flip them over.
  • Close the lid and cook over low heat for 5 minutes to cook the filling.

  • Remove the lid, turn the heat to medium, and briefly sear both sides until golden brown and crispy.
  • Transfer to a plate, brush with teriyaki sauce, and drizzle with mayonnaise to finish.
    💡 Wrap saran wrap around the mouth of the mayonnaise, secure with a rubber band, and poke holes in it for a thin, pretty spread.

  • Finish with katsuobushi or green onion powder, if desired.

Caveats & tips

  • Utilizing sources: Teriyaki sauce can be made ahead of time and chilled to stabilize the flavor.
  • Dough consistencyThicker will make the pancakes thick and fluffy, thinner will make them thin and crispy. I prefer the texture of condensed milk.
  • Flipping tips: plates make it easy to flip without fail.
  • Topping Applications: In addition to katsuobushi and green onion powder, corn and cheese are added for extra flavor.
