How to create

- Dice 1/2 of the onion and 1 green chile, and roll and chop the sesame leaves.

- In a skillet over medium-high heat, add 150 grams of pork belly.

- When the oil from the pork belly starts to release, add the onion and sauté until it starts to color.

- Add 1 T ssamjang, 1 T tonkatsu sauce, 1 T sugar, and 1 T minced garlic and stir-fry for 1 minute, mixing evenly.
💡If it takes a long time to season, turn off the heat for a while, add the seasoning, and turn it back on.

- Add 50 ml of water, stir to coat with the flavors, and reduce to your desired consistency.

- Serve the meat and seasonings over the rice and sprinkle with sesame leaves, green chiles, and whole sesame seeds.
Caveats & tips
- Fire control: Daepae pork belly is thin and cooks quickly, so it's best to stir-fry it quickly over medium heat.
- Seasoning Concentration: If the soup is too thin when simmering, it's perfect for rice, and if it's thicker, you can enjoy a richer flavor like bibimbap.
- Topping Applications: Try adding ingredients that go well with pork belly, such as lettuce instead of sesame leaves, chives in addition to green onions.
