How to create
Making Sindjeon Tteokbokki

- Rinse the refrigerated wheat balls once and soak them in cold water.

- Meanwhile, make the marinade: In a bowl, combine 2 T fine chili powder, 1 T hot curry powder, 2 T sugar, and 1/2 T beef dashi,
Add 1 T dark soy sauce and 1/2 t flavor salt and mix well.

- In a medium saucepan over medium heat, add 400 ml of water and the reserved marinade.

- When the water starts to boil, add the soaked wheat cakes and boil for 5 minutes. Meanwhile, pre-soak 1 t glutinous rice flour in 3 T cold water.

- After 5 minutes, turn the heat to low and add the glutinous rice flour water and simmer, stirring, for 2 minutes.

- Remove from heat, add a generous pinch of pepper, stir, and you're done.
Extra Cheese (Microwave)

- Coat a microwave-safe bowl with a thin layer of olive oil and add mozzarella cheese.

- Microwave it for 30 seconds, then mix it up and down.

- Microwave for another 30 seconds to soften the cheese, then add it to the tteokbokki.
Making Fish Cakes (Air Fryer)

- Coat a piece of paper foil with a thin layer of olive oil.

- Cut 2-3 slices of fish cake into thin, long strips and spread them out without overlapping.

- Brush the tops of the fish cakes with oil as well.

- Bake them in an air fryer preheated to 180°C (356°F) for 8 minutes and they're done.

Caveats & tips
- Glutinous Rice Flour TimingBe sure to add it when the rice cakes are cooked and the broth has reduced, otherwise the sauce will be overly thick and stiff.
- Adjusting broth consistency: If the consistency is too thick, add about 50 ml of water to adjust.
- Adjusting spiciness: You can adjust the spiciness by adjusting the amount of chili powder, try it in 0.5T increments.
