* All ingredients are measured with measuring spoons (1T=15cc, 1t=5cc).
Alternative materials
- Sausage → Bacon (or both together)
- 1/3 T cumin powder → 1 T curry powder (or can be omitted)
- 1 T crushed red pepper → 1 T red pepper flakes or 1 pepperoncino
- You can add leftover vegetables from your fridge (bell peppers, green peppers, zucchini, spinach, etc.)

How to create

- Cut the sausage into bite-sized pieces and 1/2 of the onion into fingernail-sized pieces.


- Heat 2 T olive oil in a medium skillet over medium heat, then add 1 T minced garlic and sauté.

- When the garlic starts to sizzle, add the onion and sauté for about a minute.

- When the onions are translucent, add the sausage and saute.




- When the sausage starts to color, add 200 g tomato sauce, 1/3 t cumin powder, 1 t crushed red pepper, and a pinch of black pepper and sauté for 1 minute.

- Add 50 ml of water and mix well.
💡 Adjust the water to your desired consistency, between 50 and 100 ml.



- When the sauce starts to boil, reduce the heat to low, then crack in 4 eggs and top each with a handful of mozzarella cheese. Cover and simmer for about 5 minutes.

- Once the cheese is melted and the egg whites are cooked, sprinkle with a little parsley and you're done.
💡 If you like your eggs hard-boiled, or if you used frozen cheese and the cheese didn't melt well, cook it a little longer on low heat.
Caveats & tips
- Source Concentration: Add more water for a brothy style, less for a thicker sauce.
- Adjusting spiciness: Reduce or increase the amount of red pepper to adjust to your taste.
- Utilizing toppings: Sprinkle herbs like parsley and basil at the end for extra flavor and a nice presentation.
- With bread: It's great with baguettes, bread, and dipping sauces. It's also a great meal with rice.
