How to create

- Prepare a large container of unsweetened plain yogurt. Brand doesn't matter.

- Place the steamer basket in a large bowl and spread the noodles out over the top.

- Transfer it directly to the sink.

- Pour plain yogurt into the center of the cotton cloth.

- Fold the corners of the cotton cloth into a square shape to cover it.
💡 Make sure to wrap it tightly without wrinkles so the yogurt doesn't get stuck in the noodles.

- Place the pot on top of the cotton cloth, and weigh it down with water.
💡 In summer or when it's hot in the kitchen, add ice packs or ice cubes.

- Let it sit at room temperature for 40 minutes.

- After 40 minutes, fold the flattened yogurt into squares of your choice and you're done.
💡The result is a smooth, creamy Greek yogurt.

- For a cream cheese-like consistency, fold into small squares, place on top of the pot, and press for another 40 minutes.
💡 Any leftover yogurt on the noodles will stick to the noodles if you fold them slightly and press down with your hands.

- Store in an airtight container in the refrigerator.

- Refrigerate leftover whey to make a lassi drink.

Caveats & tips

- Cleaning tips: Turn the ball upside down and wash it with a cotton cloth to remove any residue.
- Utilize leftover whey: Whey can be used in drinks like lassi and smoothies, baking like bread and pancakes, soups and pasta dough, fermentation starters, dog treats, or even potting soil, and it will keep for up to 4 days in the fridge.
- Weight adjustment: If you get a lot of white clumps in your whey, your pot is too heavy. Try reducing the amount of water.
- Temperature management: In the summer, it's hygienically safe to work with ice water in the pot.
- Work location: Working over the sink allows me to build and wash dishes at the same time.
- ToppingsTry adding toppings to your finished yogurt. It pairs well with honey, allulose or maple syrup, various nuts, peanut butter, and various fruits. Frozen fruit also works well.
