How to create


- Prepare the saucePrepare the soy sauce by mixing 2 T dark soy sauce, 1 T oyster sauce, 2 T sugar, and 100 ml water.


- Trimming Materials: Thinly slice 1/2 scallion and 1/2 onion.



- Scallion oil: Heat 2 T of cooking oil in a skillet and add the scallions to the Lowfor 3 minutes to release plenty of scallion flavor.


- Sautéing onions: add diced onion and Mediumfor 3 minutes and cook until translucent.


- Simmering Sauces: Pour in the prepared soy sauce Mediumand simmer for 3 minutes.



- Cooking egg water: Roughly beat 3 eggs, pour over the sauce and immediately cover with a lid. Lowand cook for 3 minutes.



- Complete: Place rice in a bowl, pour over the finished egg soy sauce, and enjoy while hot.
Caveats & tips
- Unscramble eggs: It's okay if the eggs aren't perfectly poached, the irregularity will make the flavor more appealing.
- Egg doneness: This recipe will make them semi-cooked, and you can adjust the doneness by removing them from the heat and using the residual heat.
- Sautéing onions: If you stir-fry them too long on low heat, they won't be as sweet. Over medium heat only until transparent Stir-fry.
- Source Concentration: If it's too runny, it will be absorbed by the rice and become soggy, so if it's too runny, simmer for another minute or two.
- Select rice: In addition to white rice, multigrain and brown rice also work well.
- Toppings: Add nori powder, whole sesame seeds, and chili powder to your liking.
