- 1 can (300 to 400 grams) canned chickpeas
- 1/2 onion
- 10 sesame leaves
- 100 g green onions
- 1 cucumber
- 1 green chili pepper

- 2 T plum juice (or water)
- 1 T sugar
- 1.5 T sesame oil
- 3 T vinegar
- 4 T bone broth
- 1 T minced garlic

How to create


- Cook the somen noodles in boiling water for 3 minutes. Rinse several times under cold water to remove starch and drain well.

- Chop the onion, sesame leaves, cucumber, and green onion.
- Cut the bone into bite-sized halves.

- Combine the trimmed onion, sesame leaves, cucumber, scallions, green onions, green chiles, and halved golbeans in a large bowl.








- Next, whisk together 4 T bone broth, 3 T vinegar, 3 T chili powder, 2 T plum juice, 1.5 T sesame oil, 1.5 T gochujang, 1 T sugar, 1 T minced garlic, a pinch of black pepper, and a generous pinch of sesame seeds.


- Place the tossed bean paste and somen noodles on a plate, mix well, and serve. (Or toss together and serve at once.)
Caveats & tips
- Somen texture: Boil them briefly, about 3 minutes, and rinse them thoroughly in cold water to make sure they're still chewy.
- Increase umami: Adding 4 T of bone broth to the marinade really brings out the flavor.
- Adjusting spiciness: Leave out the green chile seeds for less heat, or add one or two for more.
- Light snacks: It's not as filling as rice, so it's a great snack for long drinks.
- Veggie variations: Cucumber - you can substitute lettuce or chives for the leaves.
