Ingredients (Serves 1)

- 150 g somen noodles
- 1 T chili powder
- 1 T gochujang
- 2 t cider (💡 Calibrated to 2 T sugar when using zero cider)
- 1.5 T sugar
- 2 T vinegar
- 2 T soy sauce
- 1 T Worcestershire sauce
- a pinch of black pepper
- 2 T minced garlic
- 2 T kimchi broth
- 2 t sesame oil
- 50 g shredded kimchi
- 2 sesame leaves

How to create


- 1.Cook somen noodles in boiling water for 30 seconds less than the package directions, rinse several times under cold water, and drain thoroughly.
💡I boiled it for 3 minutes, based on the OTTU somen noodles I used (package says 3-4 minutes).

- In a bowl, make the marinade by combining 1 T chili powder, 1 T gochujang, 2 T cider, 1.5 T sugar, 2 T vinegar, 2 T soy sauce, 1 T Worcestershire sauce, a pinch of black pepper, 2 T minced garlic, 2 T kimchi broth, and 2 T sesame oil.
💡I didn't have any minced garlic, so I minced 2 cloves.

- Place the thoroughly drained somen noodles in a bowl and add the marinade.

- Toss to combine the marinade.
💡The marinade can be mixed with chopsticks, but tossing with your hands helps to distribute the flavors evenly and deepen the flavor.

- Add the sesame leaves and kimchi to the bowl and you're done.
💡It pairs well with a variety of toppings, including hard-boiled eggs, lettuce, and thinly sliced onions, so feel free to add your own.
Tips and caveats
- If the kimchi is too sour, rinse it once to reduce the bitterness.
- If using zero cider, calibrate the sugar to 2 T.
- Sesame oil has a better flavor when added just before eating.
- If it's for kids, reduce the chili powder and gochujang a bit, and add a little more cider or sugar to mellow the spiciness. Conversely, if you like it hot, you can add a little more chili powder.
