Beef Mugwort Soup Recipe
This beef noodle soup recipe is perfect for those chilly days when you're craving a hearty bowl of soup. It's a simple dish that packs a lot of flavor with just a few ingredients. Let's get started with this easy beef stew recipe.
Ingredients (for 2 servings)
- Beef (for broth): 150 grams
- Radishes: about 200 grams (about half a head)
- Water: 1.5L to 2L
- minced garlic: 1 Tablespoon
- Green onions: 1
- Soy sauce: 4 Tablespoons
- Sesame oil: 2 Tablespoons
- Salt, ground black pepper: To taste
- Beef Dashi 1 Tbsp.
By measurements: 1 T=15 cc, use 1 t=5 cc measuring spoons
Making Beef Soup
Trimming materials
Cut 200 grams of radishes into thin slices. The thinner the radishes, the better the broth will flavor and the shorter the cooking time.
Soak 150 grams of beef in cold water for about 10-15 minutes to remove any blood. It's better if you change the water once or twice halfway through, this will give the broth a cleaner flavor.
Chop 1 green onion and reserve it for the final step.
Sautéing beef
Heat 2 tablespoons of sesame oil in a wok over medium-high heat, then add the beef and stir-fry. When the beef is cooked on the outside and begins to change color, add 4 tablespoons of the soy sauce and stir-fry until the meat is cooked through. Stir-frying with the soy sauce first adds a deep flavor and makes the broth taste richer.
Stir-fry with radishes
Once the beef is cooked, add the reserved radishes and 1 tablespoon of minced garlic. Saute the radishes until they are slightly translucent, which will release their sweetness and make the broth even more delicious when simmered later.
Pour water and bring to a boil
Add 1.5L to 2L of water to the sautéed beef and radishes and bring to a boil over high heat. You want the water to be just enough to cover the ingredients.
Bring the broth to a boil, then reduce the heat to medium-low and simmer for about 30 minutes, during which time the radishes and beef will be sufficiently tender and the flavor of the broth will deepen.
Tip: Remove any gray foam that forms along the way, as it can cause the broth to taste gritty.
Aligning and finalizing
Once the broth has reached a simmer, add 1 tablespoon minced garlic, 1 tablespoon beef dashi, and stir to combine. Season to taste with salt and pepper, and finally, add the scallions and simmer for a few minutes to infuse the broth with their flavor.

Prepare the onion and Spam in a 1:1 ratio to your liking. Crack 4 eggs into a bowl and mix everything together. Add 1 tablespoon of mirin, 2 pinches of flavored salt, and 1 teaspoon of ground black pepper and mix well. Fry in a pan over medium-high heat with cooking oil, making sure it doesn't burn.
Tip: While it's great to cut up big chunks of Spam and stir-fry it, it's also fun to cut it into smaller pieces for a different kind of egg roll.
Alternative ingredients and cooking tips
- You can use stock to deepen the flavor of the broth - try anchovy or kelp stock.
- Add chili powder for a kick of heat, which makes this dish even more comforting in cold weather.
