Recipe: Neapolitan Pasta
Ingredients (per serving)
1/2 small onion, 2 garlic cloves, 1 sausage, 1 rasher bacon, 1 T oyster sauce, 3 T ketchup, 100 g pasta noodles, 1 T cooking oil, 1 L water, 10 g salt, 1 T black olives (can be omitted), Parmigiano-Reggiano (can be omitted)
The creation process
First step
Trim the onion and garlic. Slice the onion into thin slices and the garlic into cloves. Cut the sausage and bacon into bite-sized pieces.
Second step
Heat 1 T of cooking oil in a pan, and in another pot, boil the pasta noodles in 1 L of water and 10 g of salt. The noodles should be cooked about 2 minutes less than the recommended time on the package, which is perfect for sautéing later. In a pan preheated to medium heat, fry the bacon and sausage, adding the onion and garlic when they start to color slightly.
Step three
When the onions start to turn translucent, add 3 T ketchup and 1 T oyster sauce and saute over low heat until the ingredients are evenly distributed. If you want to add black olives, add them at this point for extra flavor.
Step Four
Add the cooked pasta noodles to the pan, add a ladle or two of noodle water, and stir-fry to combine the sauce with the noodles. If necessary, add a little more noodle water to reach your desired consistency. Stir-fry the noodles and sauce together for about 1-2 minutes and you're done.
After plating, grate some Parmigiano-Reggiano cheese over the top for a savory and delicious Neapolitan pasta dish.
