I often grill pork belly, but I always end up with leftover pork belly, so today I'm going to use it to make a simple and delicious Gochujang Pork BellyThis recipe is a little strong for a side dish, so be warned, it's best served with rice.
Gochujang Pork Belly Recipe
Ingredients (for 2 servings with rice)
250 g pork belly, 5 garlic cloves, and a handful of scallions (can be omitted)

2 T gochujang, 2 T mirin, 1 T sugar, 1 T red pepper flakes, 0.5 T oyster sauce, and a pinch of ground black pepper
The creation process
The first
Make the sauce ahead of time by mixing all the sauce ingredients together. Add the gochujang, mirin, sugar, chili powder, oyster sauce, and pepper and mix well.
The second
Sear the pork belly in a skillet over medium-high heat. Once golden brown on one side, flip it over and add the garlic to toast with it.
Third
When the bottom of the pork belly is golden brown, cut it into bite-sized pieces. Wipe off any excess oil with a kitchen towel for a cleaner flavor.
Fourth
Push the meat to one side of the pan, and pour the sauce around the edges of the pan. Tilt the pan to heat the sauce until it boils once.
Fifth
When the sauce sizzles, reduce the heat to low and stir to combine the pork belly and sauce. Stir-fry for about 3 minutes, tossing to prevent the sauce from burning.
Sixth
Add a handful of scallions and sauté for another minute. Arrange on a plate and serve. (You can omit the scallions and substitute other green vegetables.)
