Recipe: Herb-Crusted Lamb Chops
Ingredients (I used a shoulder rack)
- Lamb cuts: 1 rack of French racks (8-9 units) or 8 shoulder racks
- Salt: Moderate
- Pepper: Moderate
- Mustard sauce: 2 Tablespoons (Dijon or whole-grain mustard)
- Cooking oil
Herb Crust Ingredients
- Breadcrumbs: 1:1 ratio with prepared herbs
- Parmigiano-Reggiano cheese: 20 g (grated, can be substituted with Parmesan cheese if unavailable)
- Fresh herbs: 10 g rosemary, 10 g thyme, 100 g parsley
- Olive oil: 2 Tablespoons
- Cumin: 1 teaspoon (can be omitted)
By measurements: use 1 T=15 cc, 1 t=5 cc measuring spoons
Yogurt sauce ingredients
- Plain yogurt: 150 grams
- Mayonnaise: 1 Tablespoon
- Minced garlic: 1 teaspoon
- Salt: 1 pinch
- Pepper: Moderate
- OptionalMaterials: Dill, parsley, chives, lemon zest, etc.
The creation process
Create an herb crust
Trim the herbs. The amount of ingredients will vary depending on the meat you are preparing and the type of herbs you are using. Wash, dry, and remove the leaves from the stems before using. I used 200 grams of Italian parsley, 10 grams of thyme, and 10 grams of rosemary.
In a blender, combine the breadcrumbs, prepared herbs, grated Parmigiano-Reggiano cheese, and herbs in a 1:1 ratio. Add 2 T olive oil and 1 T cumin to make a moist crust. The 1 T of cumin adds a unique flavor of rich curry, but you can leave it out if you don't have it.
As is, pan fry them once and leave them in a large pan to cool.
Prepare the lamb chops
Rinse the lamb under cold water to remove any blood, then pat dry with kitchen paper. Remove the fascia between the bones and any excess fat, and season with salt and pepper.

Heat the cooking oil in a pan over high heat and sear the lamb chops in short batches of 1 minute each side and back. Cook until crisp and colored on the outside, then rest for 5 minutes.
Applying mustard sauce
Brush the rested lamb chops with a thin, even layer of mustard sauce. The mustard will hold the lamb's odor and act as a glue for the herb crust to hold together.

Cover the lamb chops with the herb crust. Press down firmly with your hands to make sure the herb crust sticks.
Baking in the oven
Preheat the oven to 200°C (392°F), add the lamb chops, and bake for 25 to 30 minutes. If you have an instant-read thermometer, insert it and check the core temperature. Aim for medium-rare to medium, and remove them when the internal temperature reaches 54-57°C (129.2-134.6°F).
Make a yogurt sauce
Whisk together about 200 grams of plain yogurt with 1 T mayonnaise, 1 t minced garlic, 1 pinch of salt, and black pepper. Optionally, you can add dill, parsley, chives, or lemon zest for extra flavor.
Finishing and serving
Let the grilled lamb chops rest for about 10 minutes, then slice into bite-sized pieces and place on a platter. Serve with the yogurt sauce on the side.

- Select a lamb cut:
- French rack: This is a premium cut of lamb, with just the right amount of fat and lean meat, and the bone is neatly tucked away for a very elegant presentation after cooking.
- Shoulder Rack: Very meaty and good value for money, but a bit more fatty, and possibly less tender than French rack.
- Use fresh herbs: Using fresh herbs rather than dried herbs is a great way to capture the aroma and flavor.
- Create a herb crust: Drain the herbs thoroughly to ensure they mix well with the breadcrumbs and create a crispy crust.
- The smell of lamb: Lamb has a strong odor that can be a little overwhelming for those not used to it, so when searing it, crush 2 T of minced garlic or 5 cloves of garlic and mix it into the cooking oil to help with the odor.
- Listing time: Let the meat rest for 10 minutes after removing it from the oven to spread the juices evenly and make it even more delicious!
