Cooking tips & substitutions
- For the deep flavor of the broth: Adding a few potatoes or radishes to the broth at the end of the simmering process adds a nice depth of flavor.
- Alternative materials: If you don't have anchovy paste, you can make the sauce with just soy sauce, or add a little ssamjang instead of sesame sauce for a different flavor.
- Multiple sources: If you like spicy flavors, you can add thinly sliced green chiles to the sauce for an extra kick of heat.
- Prepare your ingredients: The amount of vegetables doesn't have to be measured exactly - you can add your favorite vegetables or whatever you have on hand.
Simple application recipes
Add noodles: Once you've finished the whole chicken, add the noodles to the broth and serve with the leftover sauce. The rich flavors of the broth will soak into the noodles and give them a hearty taste.
Make chicken stock: Leftover chicken and broth can also be simmered with cold rice and served as porridge. Sprinkle it with sesame salt and seaweed flakes for extra flavor.
