Preparation materials
- Pork belly: about 2 kg (cut into bite-sized pieces)
- Barbecue Rub
- Barbecue sauce: 3 Tablespoons
- maple syrup: 2 Tablespoons
- Whiskey (Jack Daniels): 1 Tablespoon (can be substituted with another whiskey)
- Liquid Smoke: 1 Tablespoon (can be omitted)
- Sugar: 1 Tablespoon
- Butter: 150 g
By measurements: 1 T=15 cc, use 1 t=5 cc measuring spoons
Homemade Barbecue Rub Recipe
A dry rub is a powdered seasoning that binds meat and adds flavor. The recipe below is a great combination for pork belly burnt ends, but feel free to adjust the ingredients to your liking. You can also use a store-bought barbecue rub if you prefer!
- Sugar: 1 Tablespoon
- Salt: 1 Tablespoon
- smoked paprika powder: 1 teaspoon
- Ground black pepper: 1 teaspoon
- Garlic powder: 1 teaspoon
- Onion powder: 1 teaspoon
- Chili seasoning: 1 teaspoon (can be omitted)
- Cumin powder: 1/3 teaspoon (can be omitted)
- Cinnamon powder: 1/3 teaspoon (can be omitted)
Mix all the ingredients together and you have your homemade barbecue rub!
The creation process
Prepare the pork belly
Drain the pork belly on paper towels and then cut it into small pieces, about two bite-sized pieces, but not too small. The pork belly will shrink during the grilling process and become smaller.
Applying barbecue rub
Coat all sides of the pork belly evenly with the barbecue rub, using the yellow mustard to make it easier to apply the rub. Press down firmly on the rub to get it to stick.
Priming in the oven
Place the pork belly on a perforated tray in an oven preheated to 212°F (100°C) and cook slowly for 2 hours. The fat will drain out of the pork belly during this process. Place a tray underneath to catch the dripping fat. (I don't use oil.)
Cooking with butter
Place the first batch of cooked pork belly on a tray that is higher than the pork belly and place 1 tablespoon of sugar and 150 grams of butter between the pork belly pieces. You don't have to use all 150 grams, but be generous. Cover the top of the tray with cooking foil to make it airtight. Steam in an oven set to 302℉ (150℃) for 1 hour.
Create a source
Once the secondary cooking is complete, remove the pork belly and remove the foil. Combine 3 T barbecue sauce, 2 T maple syrup, 1 T whiskey, and 1 T liquid smoke and drizzle evenly over the pork belly. Bake at 150°C (302°F) for an additional 15 minutes to finish. Serve the pork belly on the tray or if transferring, drizzle with the sauce below.
Tips for success
- You can apply the barbecue rub a day in advance, seal it, and store it in the refrigerator for a deeper flavor.
- You can discard the pork belly grease on the tray as it solidifies.
- Use liquid smoke to create a smoky flavor.
- The fat from the pork belly must drain off during the low temperature cooking process to ensure the pork belly is crispy on the outside and moist on the inside, so be sure to let the fat drain off before cooking.
- Check the color of the pork belly during the last baking step and cook to your liking. Just make sure to cook it for at least 10 minutes to let the alcohol flavor come out.
- If you're worried about alcohol around kids, try bringing the sauce to a full boil in a saucepan before using or leaving it out.
- Serve the final sauce with the meat because the pork belly has lost most of its fat during the first cooking process. This sauce is a combination of butter and sauce, with very little pork belly fat.
- Dip the bread in the sauce and top with burnt ends. You won't need another sauce.
