About the Tomato Curry Recipe: A Healthy Curry with Flavor
Tomatoes add a light and refreshing flavor to a curry, but the acidity gives it a deep flavor that goes well with rice. It's also a healthy dish, thanks to the lycopene content of tomatoes, so it's easy to make without any special ingredients.

The creation process
Trimming materials

Dice 2 tomatoes and thinly slice 2 onions. Finely mince the garlic.
Saute Onions & Garlic

In a saucepan, heat 3 T of olive oil and sauté the diced onion over medium-low heat for 5 minutes. When the onions are translucent, add the minced garlic and sauté for an additional 2 minutes.
Add tomatoes and cook

Add the diced tomatoes and sauté for 3 minutes, crushing them as you go. You want the tomatoes to soften and the broth to release.
💡 Tip: If you can see the cabbage in the middle, we don't recommend adding it, as the green flavor will overpower the curry flavor if it simmers too long. If you want to add it, add it at the end of cooking and heat it up within 10 minutes.
Create a curry base

Add 600 ml water, 1 t cumin powder, 1 t chili powder, 1 t sugar, and 100 g curry block and dissolve well so there are no lumps.
💡 Tip: Fry the cumin powder and chili powder in oil once for a deeper flavor.
💡 Tip: Substitute 1 T dark soy sauce and 1 T ketchup for the cumin powder and red pepper flakes for a Japanese-style tomato curry flavor.
Adding depth of flavor

Once the curry block is fully released, add the caramelized onion slices and simmer for another 5-10 minutes.
💡 Tip: If you add the caramelizing onions too soon, the flavors will be scattered, so make sure to add them after the curry block is completely loose.
Finalize

Sprinkle with your favorite pepper flakes and mix to combine.
Prepare toppings
Try a variety of toppings to make up for the lack of protein. Choose from fried eggs, hard-boiled eggs, sausage, cooked chicken breast, grilled pork chops, and more.
Plating & Finishing

Place the rice on a plate, top with the finished tomato curry, add your favorite toppings, and you're done!
