Recipe: Crème Brûlée

Preparation materials

  • Milk: 100 ml
  • Sugar: 4 Tablespoons
  • Egg yolks: 4
  • Taste: 1 pack
  • Vanilla essence (can be omitted): A few drops
  • Sugar for topping: Brown sugar or white sugar

Measuring and preparing ingredients

Measure out all your ingredients. For the eggs, we'll only be using the yolks; you can save the whites for meringues or other dishes.

Tip: Preparing your ingredients ahead of time makes cooking so much easier!

Mixing ingredients

Crack the 4 egg yolks into a bowl and gently whisk in 4 tablespoons of sugar - you don't want to beat them too hard, you want them to be light and fluffy.

Combine 200 ml fresh cream and 100 ml milk in a large bowl. This mixture will create the smooth texture of the crème brûlée.

Tip: Mix gently to avoid introducing too much air. If air is introduced, the cream may not be smooth.

Add a few drops of vanilla essence to the mixture and strain through a sieve for a smoother crème brûlée.

Preparing the flavor balm

Crumble 1 pack of flavored chestnuts and line the bottom of a heatproof container. You'll love the crunchy flavor of the chestnuts with the smooth cream.

Add ingredients to a container

Pour the mixed liquid into the container lined with the flavoring balm. Be careful not to overfill the container.

Steaming

Cover the container with plastic wrap and steam in a steamer over medium heat for about 20 minutes, making sure to control the heat so the water doesn't boil. I used a steam steamer, but a stovetop steamer will work just as well.

Tip: Wrap tightly in plastic wrap. If moisture gets inside, it will turn into a steamed egg.

Cool down

Once removed from the steamer, allow the crème brûlée to cool at room temperature for about 10 minutes, then chill in the refrigerator for at least 30 minutes. If you have time, store for at least 2 hours.

Prepare the sugar

Sprinkle a thick layer of sugar over the cooled crème brûlée. You can use brown sugar or white sugar, it doesn't make much difference in flavor. Just make sure to put it on thick and spread it out as flat and wide as possible.

Caramelizing

Use a torch to caramelize the sugar. The sugar will melt and create a thin, crispy crust. If you don't have a torch, you can also heat a spoon on the stove and hold it over the sugar. Be sure to wear thick gloves when using this method to avoid burning yourself.

Complete

The finished crème brûlée is served by breaking the crispy shell with a spoon and scooping out the soft cream underneath. It's even better if you dip your spoon deep into the chestnuts underneath, as the savory flavor of the chestnuts, the smoothness of the cream, and the sweet sugar combine really well.
